

The Federal Hotel is getting quite a name in the area for it’s use of fresh local produce, specialising in seafood. Head Chef Josh Beddows showcases his favourite recipes:
Our specialities include fresh local seafood straight from the sea to the plate and country home style cooking with a touch of modern flair. Our Specials board has everything from whole salt and pepper fish to roast whole lamb rump with red wine glaze. Our duck also has people coming back time and again.

palm sugar, corriander, chilli and lime infused prawns tossed through an Asian style salad with toasted peanuts, fried leeks & a Thai sesame dressing
cos lettuce, egg, bacon, shaved parmasen, anchovies and croutons all in a homemade caesar dressing. Add your choice of Morrocan spiced Chicken or Cajun spiced prawns.
